All our cheese is made with Jersey cows’ milk and aged at least 60 days.
This award-winning brie is made from raw cow milk. The cheese is aged to a creamy, rich perfection at 60 days. It has a line of vegetable ash in the center and is wrapped in local grape leaves that have been boiled in wine and then it is wrapped in twine.
This cheese won second place at the 2016 American Cheese Society awards.

Each wheel of our white cheddar is rubbed with vegetable shortening and bandage-wrapped with cheesecloth in the traditional method of aging. This allows the cheese to breathe during aging for maximum flavor development.

Our newest cheese and one our favorites, Havarti is a mild, creamy cheese with fresh dill mixed in. Add it to your next charcuterie board or on a sandwich for a new twist!

Gouda is a washed curd cheese which is pressed and smoked over local walnut shells and mesquite chips for a deliciously smoky and creamy product. Delicious on grilled cheese sandwiches, your favorite soups or paired with apple slices.

How Long Should My Cheese Last?
All of our wedges of cheese are labeled on the back with a sell by date. The cheese will be good for 2-4 weeks after this date.
After a week or two the cheese forms a thin film of mold on the surface. This is simply the good molds and bacterias that are naturally in the cheese and does not affect the quality. When you are ready to eat the cheese, simply shave off the surface with a sharp knife.
Once you open the cheese and cut into it, save the rest by wrapping it in wax paper or Saran Wrap. If you are traveling home with your cheese, you will want to make sure it is sealed well. As long as it is not open to airflow it will be good at room temperature for a day.
The Marinated Feta and Labneh is covered in oil which serves as a natural preservative and allows the cheese to ship and travel unrefrigerated for a week. It will keep in your refrigerator for at least 6 months.
Once you use some of the cheese, store the remainder by pushing the cheese down with a spoon to ensure it is submerged in the oil and store it in a refrigerator.
The blue and brie cheeses will last for a couple months after purchase and just get stronger with age.
