Orchard Blue

The creamy texture of our blue cheese, is like none elsewhere. We dip the newly-made wheels in our own apple cider daily for 3 days. This 2-3 month-old, raw cow milk cheese has a moist yet semi-firm texture and finishes with a tangy, blue flavor.

This cheese won first place at the 2016 American Cheese Society awards.

This cheese won second place at the 2016 American Cheese Society awards.

2 lb wheels

Marinated Labneh

To create this award-winning Mediterranean soft cheese, we make yogurt with pasteurized cows milk and drain it through cheesecloth until it is thick. We then spice it with fresh garlic, parsley and salt. We shape it in balls and drop it in olive oil with peppercorns, fresh herbs and dried red pepper for garnish. Delicious on pita bread and crackers or as a vegetable dip. Use the flavored oil on salads.

This cheese has won first place at the American cheese Society competition 2016, 2017, 2018, 2022

Available in 9 ounce jars and 1 gallon buckets

Cheddar

Each wheel of our white cheddar is rubbed with vegetable shortening and bandage-wrapped with cheesecloth in the traditional method of aging. This allows the cheese to breathe during aging for maximum flavor development.

How Long Should My Cheese Last?

All of our wedges of cheese are labeled on the back with a sell by date. The cheese will be good for 2-4 weeks after this date.

After a week or two the cheese forms a thin film of mold on the surface. This is simply the good molds and bacterias that are naturally in the cheese and does not affect the quality. When you are ready to eat the cheese, simply shave off the surface with a sharp knife.

Once you open the cheese and cut into it, save the rest by wrapping it in wax paper or Saran Wrap. If you are traveling home with your cheese, you will want to make sure it is sealed well. As long as it is not open to airflow it will be good at room temperature for a day.

The Marinated Feta and Labneh is covered in oil which serves as a natural preservative and allows the cheese to ship and travel unrefrigerated for a week. It will keep in your refrigerator for at least 6 months.

Once you use some of the cheese, store the remainder by pushing the cheese down with a spoon to ensure it is submerged in the oil and store it in a refrigerator.

The blue and brie cheeses will last for a couple months after purchase and just get stronger with age.

We hope you enjoy our cheese!
